We enjoy our smoked stilton as part of a cheeseboard, but with Christmas coming up soon (sorry!) we love to create a soup with it. The rich, smoky/salty cheese complements the bittersweet flavour of the broccoli, and it’s a great way to use up leftover stilton! We use our smoked garlic to add another level to the flavour profile 😍

Smoked Stilton Cheese, Smoked Garlic Bulb
Ingredients:
1tbsp Olive Oil
1x Onion (diced)
1x Smoked Garlic Clove (crushed)
2x Broccoli Heads (chopped)
2x Potatoes (chopped)
1Ltr Vegetable Stock
450g Smoked Stilton Cheese (crumbled)
*Few pinches of chopped broccoli head and crumbled smoked stilton to garnish
Method:
1) Heat the oil in a large pan over a medium heat.
2) Add the chopped onion and crushed garlic tot eh pan. Cook for 5 to 7 minutes until the onion is soft and fragrant.
3) Add the chopped broccoli an potatoes to the pan. Stir until they begin to release their moisture (5 to 10 minutes).
4) Add the vegetable stock and bring to boil. Reduce the heat and simmer until the vegetables are tender.
5) Add the stilton cheese and stir for 5 minutes until the cheese has melted into the mixture.
6) Purée the soup with an immersion blender or use a food processor/blender.
7) To serve, decant the soup into small bowls and garnish with the spare chopped broccoli and crumbed stilton. This soup is great with crusty white bread!.
