Biltong Loaded Fries (Guerrilla Fries!)

We love a treat whilst watching a film/our favourite binge TV show! Loaded fries! We make a very moreish cheese sauce, and top it with our original biltong! (An idea by Paul from @guerrillachickenspirits)

Piggy Petes Products Used:
Smoked Paprika, Smoked Sea Salt, Smoked Black Pepper, Smoked Stilton Cheese, Original Biltong

Ingredients:
400g Oven Fries
1tsp Smoked Paprika
1tsp Smoked Sea Salt
1tsp Smoked Black Pepper
4tbsp Olive Oil
3tbsp Plain Flour
300ml Whole Milk
225g Smoked Stilton Cheese (crumbled)
3tbsp Pickled Sliced Jalapenos (chopped)
2tbsp Jalapeno Brine
3x Spring Onions (chopped)
50g Original Biltong (chopped)

Method:
1) Prepare your oven to 200°c.
2) Place your oven fries in a bowl along with 2tbsp of the olive oil, the smoked paprika, smoked sea salt and smoked black pepper. Give them a good mix to ensure all fries are coved with the seasonings. Cook for 20-25 minutes according to cooking instructions.
3) Whilst the fries are cooking, place a small pan on a medium heat. Add the remaining 2tbsp of olive oil and once hot, stir in the plain flour and cook for another 3 minutes, stirring continuously. Add the milk and whisk constantly to avoid lumps. Once the sauce has started to thicken (5 minutes), add smoked stilton cheese, 1/2 the jalapenos, and the brine. Remove from the heat once the cheese has fully melted into the sauce.
4) Remove the fries from the oven and place them on a serving plate. Top them first with the cheese sauce and the remaining jalapenos. Then sprinkle on the chopped spring onions and finally the chopped biltong.
