Product Description:

READY TO EAT: Beef that is cured using the equilibrium curing method for 21 days in a combination of ingredients. Once the cure time is complete the beef is rinsed of its ingredients and patted dry, wrapped in a collagen sheet and netting then hung in a dedicated curing chamber.

When the beef has hit the 1st target weight lossĀ  we remove the collagen sheet and netting, coat with mixture of spices and place the beef back into the curing chamber. We hang for a further 3 to 4 weeks until the spice coating has completely dried out and the target weight loss is achieved.

Curing Chamber:

The product is hung in a dedicated curing chamber that helps slow down the weight loss and really develop the flavour profile. Weight loss target is between 15% and 45% depending on product.

Beef(cow), Black Pepper, Brown Sugar, Cayenne Pepper, Chilli Paste, Coriander Powder, Cumin Powder, Fenugreek Powder, Garlic Paste, Minced Garlic, Salt, Smoked Paprika, Sodium Nitrate, Sodium Nitrite, Sweet Paprika.
