Recipe – Whipped Feta Dip with Roasted Garlic and Tomatoes

Smoked Feta & Tomato Dip

We do love a good bread and dip combo to snack on when busy sorting through stuff. One we love is a creamy herbed whipped feta dip, with roasted garlic and cherry toms! And a toasted sourdough bread to dip!

Piggy Petes Products Used:
Smoked Feta, Smoked Garlic, Smoked Black Pepper, Smoked Sea Salt

Ingredients:
200g Smoked Feta
400g Greek Yogurt
150g Cherry Tomatoes
1x Smoked Garlic Clove (minced)
1 Pinch Smoked Sea Salt
1tsp Fresh Oregano (chopped)
1 tsp Fresh Thyme (chopped)
1tbsp Extra Virgin Olive Oil
1 Pinch Smoked Black Pepper (to taste)

Method:
1) Preheat oven at 210°c.
2) Wash the cherry tomatoes and prick each one with a toothpick (this helps prevent them from bursting!). Place them in an oven-safe dish along with the minced smoked garlic clove, the fresh herbs, smoked sea salt and olive oil. Mix them together and place in the oven for 15 minutes.
3) Whilst the tomatoes are cooking, break up the feta into small cubes and put it into a food processor/blender. Add the Greek yogurt bit by bit and process until smooth and you have the consistency you prefer. Once done transfer to a serving bowl.
4) Place the roasted tomato mixture on top of the whipped smoked feta dip. Drizzle a little olive oil over and season with a pinch of smoked black pepper. Serve with crackers or your favourite toasted bread.
